If the pan starts to smoke, it’s overheated and needs to be turned down to the heat. “A big mistake people make is wanting to mess with food and check to see if it sticks or turns brown,” says Briscione. “Just let it sit for 3 to 4 minutes, then rotate the food 90˚ without flipping.
