Khaman, is a popular Gujarati snack, made from ground flour or besan flour (also known as chickpea flour). Khaman is a variation of the Rava Dhokla recipe that I shared before. The main ingredient in Khaman is flour, while for Rava Dhokla, the main ingredient is semolina. Khaman is also known as Besan Dhokla or Golden Dhokla Due to the yellow color from the flour, Khaman is traditionally steamed in a pressure cooker on the stove without a whistle. Or in a steamer on the stove, similar to the one used for idli. We will steam this Khaman Dhokla in Instant Pot.

Why will you love Khaman Dhokla?

  • It is a healthy breakfast or appetizer. Skip the semolina to be gluten-free.
  • This instant khaman is quick and easy to make with everyday ingredients.

How to make Khaman Dhokla?

Let’s start with collecting the ingredients. Most commonly used ingredients are readily available in your pantry. A special ingredient is Eno fruit salt, which you can find in Indian grocery stores.

Prepare Khaman Batter and Steam

  • Mix all ingredients, except Eno fruit salt – flour, tapioca starch, turmeric, salt, sugar, green chili, ginger, lemon juice, oil and water. Stir well and let the dough rest for 15 minutes.
  • While the dough rests, boil 2 cups of water in a pressure cooker on sauté setting. Alternatively, grease the steel bowl in which you will make the khaman with oil. I used a container from stackable steel tanks for the instant pot.
  • After 15 minutes, add Eno to the dough and stir gently in one direction. The dough will become effervescent and increase in volume. Do not stir too much.
  • Quickly transfer the dough to the greased steel drum and place the barrel on top of a rivet. It is important to start cooking quickly after adding Eno to get soft and fluffy khaman.
  • Then place the trident along with the pan into the instant pot. Set to steam for 15 minutes in vent mode. Instant Pot Timers do not operate in vent mode so you will need to set an external timer.
  • Steps to prepare Khaman Dhokla in an instant pot

  • After the cooking time is over, let the khaman sit for 5 minutes. Then open the lid of the instant pot and remove the khaman dhokla container with tongs.
  • Let it cool for another 5 minutes and it’s easy to remove. Insert a knife or toothpick to check the cake is done. The knife will be almost clean. Otherwise, you will have to steam for another 2-3 minutes.
  • Run a knife around the edges of the khaman. Place a plate on top of the khaman container and turn it upside down. This will help to get the khaman out of the container easily.

    Prepare to brew

    • While the khaman is steaming in the instant pot, put the cooking oil in the pan on the stove over high heat.
    • Then add the mustard seeds and let them warm. Now, add the curry leaves and green chili. Let them saute for about 30 seconds. Add in the roasted sesame and turn off the heat.
    • Now add water, sugar, salt and stir well.

    How to steam Khaman Dhokla on Stovetop?

    Use a large pot that can hold a container of khaman powder. Follow the same steps as above to make the dough. Put 3 cups of water in the pot. Cover the pot and let the water boil while you are making the dough. Place a rivet in the bottom, then place the dough container on top. Cover and cook for about 15-20 minutes over medium heat or until the knife is clean.

    Tips for making the perfect soft Khaman Dhokla

    • In my tests, I found that Eno fruit salt gives the best results.
    • Do not stir too much after adding Eno fruit salt. Start steaming within minutes of adding Eno for good results.
    • Since we are using the Pressure Cooker in vent mode, the timer function does not work. Use an external timer.
    • You can make this Khaman dhokla in advance as needed. Just reheat it in the microwave for a few seconds and it’ll be ready to serve hot.
