For a thick, porterhouse-like steak, my most common grilling technique is using a method known as reverse grilling. This process requires grilling the steak at a temperature that drops above the skewers warmth, and the ends wilt from excessive warmth. Reverse slicing works especially nicely with thick cuts because it allows the steak’s temperature to rise slowly. As a result, your steak can be cooked to the right edge as an alternative to a steak that’s burnt to the skin and undercooked in the middle.
