Oh she glows taco salad
If you accidentally end up with a salad, this undercooked taco salad is an effective way to prevent it. Tempting and full of flavor, every bite is a snack in your mouth. It’s a little different (okay, many things) completely different from the taco salads of my youth, but certainly no less delicious! My inspiration comes from my favorite taco salad at The Bare Sprout meetup over the weekend. Layered with greens, guacamole, salsa, sunflower tacos, and cashew cream, I knew this was something I could make at home quickly. As in, in 24 hours of consumption. I don’t mess around with salads every day… no sir. Read: Oh, she’s glowing taco salads Here are a few ways I’ve modified this salad:
- I used walnuts to substitute sunflower seeds for the taco meat. I’ve had success making walnut tacos before, so I caught up with that recipe, just simplifying it down to a few ingredients.
- I made macadamia cream sauce to replace the cashew cream sauce. Feel free to use any nuts you want.
- Purple romaine leaves as an alternative to flat leafy greens as I feel romaine has a larger texture to have the bottom function of such a hearty salad. Again, use whichever inexperienced person you like.
- I used my Endurance Crackers because I have some in my freezer that are simply ready to use. I absolutely love them on this salad.

Add a pile of 1/4 cup 3-minute guacamole powder (recipe below) to the center of the lettuce. 3. Spoon a few spoons of your favorite salsa.4. Add half of the walnut tacos. 5. Pour a few tablespoons of cream sauce right into a baggie, cut off the top and “pour” it into the salad. Dear. Or, just spoon it into salads right away. 6. Feel free to use chips or any other crackers you find worthy. I like to think of this salad as a vitamins in the bowl. Not only is it scrumptious, but it’s actually packed with vitamins and health. It lasted all three minutes before my entrance…much less. Eric, who shouldn’t be a guacamole fan, left me stunned by gobbling it up.

- 1/2 cup walnuts, soaked for 2-8 hours
- 1 & 1/2 teaspoon chili powder
- 1/2 teaspoon of cumin powder
- Great grain sea salt, for styling

- 11-12 tablespoons water (use as desired to achieve desired consistency)
- 2-3 tablespoons of recent lemon juice, for styling

- 1/2 small tomato, chopped
- 1/2 teaspoon fennel
- 1 tbsp + 1 tbsp recent lemon juice
- at least 1/4 teaspoon fine grain sea salt, or to style

Read more: Can I freeze broccoli saladMeat Taco: In a meal processor (or by hand), mash (or chop) the ingredients until well blended. Be sure to discard any chewy walnut flesh. Take away and set aside.Cream sauce: Drain and rinse the soaked nuts. Add them right to a processor and of course. Pour in about 1/2 cup of water and a few tablespoons of lemon juice. Add water if desired to achieve your desired consistency. Grain sauce should be super easy and never have seeds. Add salt for styling.Guacamole: In a medium bowl, mash the avocado flesh with a fork, leaving a few wedges. Add chopped tomatoes, red onions, and lemon juice, stir-fry together and season to taste.To assemble: (per bowl) Add a generous serving of greens to a large bowl used with a stack of 1/4 cup scoops of guacamole in the center. If you end up with leftover lemon and lime juice like I did, pour the juice right into a glass, fill with water, add liquid sweetener to style, and serve over ice.
Strawberry ice cream
The nut cream recipe makes up the price of a cup, so you might be wondering what to do with leftovers like I did. You can actually use nut cream as a filler for condensed milk in a lot of recipes. Say pasta sauces, cream-based soups, mashed potatoes, sandwich wraps or wrappers, etc. Have fun adding herbs, spices, and seasonings to spice things up. In addition, I also know that it can be frozen for a few months. I decided to use nut cream as the base for my strawberry candy dessert and breakfast ice cream. Yummy. Get the fun of this strawberry ice cream with lots of oatmeal, vegan one-day oats, pancakes, desserts, and even in smoothies!1. Immediately add 6-7 large strawberries to the blender along with 1/4 cup nut cream and 1 tablespoon pure maple syrup. Store strawberry ice cream retail in the refrigerator and store in an airtight container for up to a few days. 2. I made Smooth banana served with strawberry cream. I added 2 tablespoons of strawberry ice cream to the processor along with a frozen and chopped banana and 1/2 tablespoon of almond butter. 3. Immediately Soft banana “Strawberries ‘n Cream”! 4. Serve with chopped strawberries in a mini parfait for a chilly and creamy summer dessert.
