One of the things I used to really crave was a large amount of hot tea with honey, soup, lozenges, and ice cream. An odd but effective combination in case your throat feels like you swallowed some hot coals. Sore throat lasting three days. Then life begins to appear. Then congestion and getting worse, dry cough. c. I am a big number! The flip side is that I usually eat a small bowl of ice cream every night. This is not meant to happen. I love ice cream and rarely don’t store it in the house because Dan and I can destroy a container in hours (insert red, embarrassed emoji right here). It’s like dessert kryptonite to us. Dan had enough candy to stop by the retail store his way from work one evening to buy our ice cream. I don’t know which one of us was too giddy about it. He almost said “I’m so GLAD you’re sick, honey!” Huh. Not likely, however you realize what I mean. And while I really enjoy the mint chocolate or rippled peanut butter flavors, I often crave fruit-flavored frozen desserts. I really like the sorbet. I really like sherbet. I really like something and all things lemon. So when I first used my ice cream maker a few months and a few weeks ago, I knew something light and lemony was going to happen. I used to crave it! This lemon foundation CREAM is unbelievable. It’s ridiculous how it tastes so smooth and rich. I used an almost completely different technique than before. Usually, I start by warming up the milk/cream then incubating the egg yolks with the recent liquid before putting in the pot. That’s how I used to make ice cream. However, after doing some little analysis of ice cream strategies, I found here some recipes that start with heating the egg yolks first and then include in the liquid. It seemed odd to me, but anyway I decided to present it to strive for. I don’t know why and I can totally come up with this in my head, however using this technique results in a lot of tastier, smoother ice cream. There’s no such thing as science to back this up, haha; I am simply reporting my expertise. I’ve also found that the eggs don’t freeze or wobble when using this technique (after I’ve done it the other way around, I almost always have some eggs that will stretch sooner than if cooled and stirred). ). While my real intention was to make an easy lemon ice cream, adding poppy seeds here got me thinking while the ice cream was stirring. Lemons and poppy seeds have a platonic relationship, and so, to my liking, I poured in a few tablespoons of the seeds and stirred them into dreamy lemon ice cream. Result? A totally delightful ice cream, absolutely scrumptious! The crispiness of the poppy seeds was excellent and was simply what I thought was lacking. Now, disclaimer: you really need to be a fan of poppy seeds for this recipe to work for you. I mean, for sure, you would absolutely simply make lemon ice cream and never add poppy seeds. Unbelievable. BUT! If you happen to be like me and like a little texture to maintain attention-grabbing issues, choose poppy seeds. Interesting! I was curious to see if this new technique would yield identical results with completely different ice cream recipes. There’s only one solution to discover, right? I will report back. All I know is that I’m perfectly happy that I tried. This ice cream is delicious and creamy but also light and has a lemony scent! It’s a recipe that I used to be SO GLAD made by me.
