I believe I have been sheltered by kale for too long. That is, until almost 3 years ago, I once ate my friend Kelley’s wonderful kale salad when she made it right here. It’s the kind of recipe that has completely enlightened me. Kale is not so dangerous! The truth is, it’s almost as good! Hey, look what you started Kelley.

Kale + Butternut Squash and Chickpeas

I’ve had this fall recipe definitely tagged in one of my annual Meals and Wines (2008!) for the past few years as a source of flavor inspiration. Greet! What an incredible addition to kale to a hearty fall salad. The squash and chickpeas are coated with curry powder and a dash of cayenne pepper then roasted. I love Meals & Wine’s concept of a yoghurt sauce to relieve problems. That was until I ate a salad on a Saturday night that only changed my mind.
