  • Dust thoroughly, make sure all nooks and crannies are well covered. Use a sieve if needed or simply sprinkle with our fingers.
  • Knock the excess sugar/flour out of the mold to make sure there are no traces of sugar or flour in the mold. This can lead to dents and holes in your molded fondant when removed from the mold. Powder/sugar flakes will leave nasty holes and marks on your molded fondant pieces.
  • Let the molded fondant pieces rest for a while before attempting to brush off excess sugar or powder from them. Attempting to brush them while the fondant is still very soft can result in unsightly brush marks on the fondant.

These are basically all the supplies you will need when using a silicone fondant mold:

  • Food Grade Silicone Mold – the mold that I have on this page is the Marvelous Mold silicone mold.
  • icing sugar or cornstarch for dusting
  • Staples
  • Cake decorating brush
  • Sieve or dust bag

And here’s how to use the mold:

Dust and mold

  • Start by dusting the mold. By dusting, I mean really dusting well, making sure every nook and cranny of the mold is dusted. I prefer using cornstarch but if you don’t have cornstarch you can always use icing sugar.
  • To clean the dust, you can use the dust bag. See how you can make your own dust bag here. Or you can even use a sieve to sift a layer of cornstarch over the mold. Don’t worry about dusting too much, just focus on making sure the mold is well dusted. Click the mold a few times on your workspace. This will help distribute the cornmeal to all corners of your mold.

Use a small brush to dust the silicone mold

  • Next, you turn the mold upside down. Tap the plate lightly to remove any excess dough. This is why in the step above I said not to worry about collecting too much dust. You can delete it in this step. When tapping lightly, using only light pressure, we still want to keep a layer of dust on the mold.

Put the fondant in the mold

  • Next, take some fondant and knead well until there are no wrinkles. If you are making large molded fondant pieces, it helps to flatten the fondant (but not too thinly) so that the fondant can be filled into the mold faster. Then you press the rolled fondant into the mold. You will need to apply some pressure here as we want the fondant to reach all the corners of the mold.
  • At this point, you may notice the fondant surface is swollen and not smooth. Use a rolling pin to roll on the mold. Doing so will push any excess fondant out of the mold.
  • Remove excess by hand and smooth the edges with your fingers.
  • Also at this point you will notice that your fondant surface may be uneven. There may be small gaps where you need to add more fondant. Simply pinch some fondant and fill those gaps.

Peel the fondant from the mold

  • When you are satisfied with the surface, carefully peel off the silicone mold. I say ‘remove’ because when you take the molded fondant out, you fold the mold back and try to push the molded fondant out instead of trying to pull it out so it doesn’t come loose.
  • Place the ejected molded fondant onto the tray. Let stand for a few minutes to give the fondant time to set. If cornstarch or sugar is left over on the fondant, brush gently with a soft-bristled brush before using the molded fondant to decorate your cakes and cookies.
