Preparation steps

  • Activate yeast – Pour the water into the stand mixer along with the sugar and yeast, let stand until bubbly.
  • Mix – Add salt, butter, 2 cups flour. Use a dough hook to mix the dough on low heat. Add the remaining half cup of flour at a time, until the dough sticks to the sides of the bowl clean.
  • Knead Mix the dough for about 5 minutes on medium speed, until the dough is smooth and no longer sticky.
  • Form Breadsticks – Roll the dough into long pieces, cut the dough into 12-14 pieces. Roll those pieces into logs about 6 inches long. Spray the cookie sheets with cooking spray, and set the bread sheets out, leaving about 2 inches between each.
  • Evidence – Put them in the oven with the temperature turned up to 170 degrees. Let them rise for about 20 minutes, or until doubled in size.
  • Brush & Grill Once raised, beat them with 1/2 T melted butter and sprinkle with sea salt. Preheat oven to 400 degrees. Toast the bread sticks and bake or until golden brown. Remove them from the oven and beat with the remaining butter/garlic mixture.

Expert tips

  • Remember to allow enough time for the dough to rise, about an hour, for them to be fluffy.
  • The closer you are to the oven racks, the more golden brown the top will be, so if you want them to be golden brown, move the rack up a notch.
  • Make sure you use sea salt for the garlic butter as this is key to getting the flavor of the Olive Garden.
  • This recipe makes quite a bit, so if you have leftovers and need to store them, let them cool completely. Then wrap them in foil and plastic again and store them in the fridge.
  • Wrap the bread balls in foil to protect the crust. This will keep the crust from burning, but can warm the inside. If you reheat without first wrapping in foil, the bread will harden. Bake in the preheated oven at 325 degrees F for about 5 minutes to warm them up.
