How to make Thai Brown Sugar Boba
Brown Sugar Pearl Syrup
- Match your tapioca pearls to the package.
- In a pot, mix muscovado sugar with 40 ml of water and bring to a boil. Turn the heat to a simmer and add in Ready Tapioca Pearls. Simmer until brown sugar syrup thickens. Simmering cooked tapioca pearls in syrup simply provides extra flavor to them.
- Remove from the heat as soon as it has thickened.

- Bring the water to a boil and add the Thai tea mixture.
- Let the Thai tea steep for no less than half an hour and let the tea stand at room temperature. Or chill in the refrigerator until ready to use.
- In a cup, add half of the brown sugar syrup with the pearls.
- Tall with half tea and half buttermilk.
- Stir to mix and enjoy!
Hints and Notes
- I prefer to put tea in a tea diffuser, so I shouldn’t pressurize my teapot.
- Please adjust the amount of brown sugar tapioca starch to your liking. I like my boba tea to have a sweeter side and I love chewing on QQ pearls so I’m all for it! I usually add more to mine and H gives him much less. My cup of bubbly tea is usually a lot bigger than the one in the next picture haha.

- Make sure you get some boba straws because your pearls can’t match regular straws!
