Instructions for making wallet cakes

First I baked the cake in an 8” spherical cake pan. I used the insanely delicious Final Chocolate Cake for this one. Then I lowered the cake in half and glued each one with buttercream in the middle. I let it stand on a flat surface and put it in the freezer for about a quarter of an hour to let it cool and solidify. It’s simpler to carve a cake when it’s a bit frozen, then lower a small halve on each side of the cake to create a straight shape instead of a circle. Freeze the cake with buttercream and put it back in the fridge to chill. I made the frosting with a zipper and some brown fondant and placed it in the center of the cake. This way if the paper starts to crack, as it can in general (and it did for this challenge), the cracks aren’t so obvious. For this one, the paper is brown, so I used brown fondant for a nice look. I roll the brown fondant just enough to be bigger than the sheet of paper. I smeared a little water on the fondant, carefully peeled off the cover, and gently placed it on the fondant. Then I reduce the surplus. For this size of cake, a plate is great for an aspect. If the cake is larger, you have to add more sheets of paper. I smoothed it gently with my horizontal arm with half of the zipper, then trimmed off the excess with a knife and brought the wheel close to the edge twice to give the impression of stitches. Then I made the same element on the opposite side of the cake, then I made some brown fondant using the color of the ivory gel dough and a bit of brown. With tan fondant, I created what looks like a card with a looping finish. Just make sure when creating the loops it’s large enough to hold a single fondant thread. I press a large spherical end to make a rivet. Then I made the stitches again with the track wheel. To make the handles, I wrapped a piece of fondant about 1/2 inch in diameter in a strip of fondant with V-shaped ends. Then looped the ends together with the help of a lollipop stick. I also put the wheel in place of the stitches. I flipped the handle over and brushed a little water over the other side and carefully placed it in the cake, placing the end just below the ring tags on the cake. I used an extruder to make fondant wire and cut it to size and threaded one end of the wire to the handle and the other to the card. To finish it off, I painted the studs, rings, and zipper with edible gold paint. And also paint some brown food gel color on the handle where the folds will meet. !
