How to make a mermaid cake

No mermaid occasion is complete and without using a Mermaid Layer Cake. This moist vanilla cake with vanilla almond buttercream is sure to become the center of attention of any summer dessert table. Colorful mists, sprinkles, and sweetly soft mermaid tails give it a mermaid-appropriate feel! An easy and moist vanilla cake is the bottom for my Mermaid Layer Cake. The recipe I used called for an 8 inch cake pan, however I chose to bake my cake in 6 inches. The only difference is the baking time. Since there can be more dough in a smaller space, it should take about 10 more minutes to bake in the 6-inch cake pan. I used three pans, however next time I will split it into 4 6-inch pans. I wanted the shape of a taller, slimmer cake than a shorter, wider cake. This cake can be very vanilla. I love when you can really style vanilla in a muffin and use Adams Finest Vanilla. There’s a whole tablespoon in the recipe, so it has some flavor in the cake. I also use extra Dixie Crystals in each cake and frosting.Mermaid layer cake

Frosting:

I used a regular American buttercream for the frosting. To verify that I had enough, I did a batch and a half of blur. Pretty much everything left, perfect for some mermaid-themed cupcakes! You should be able to completely get away with just making a single batch, however, I often make the mistake of warning regarding these muffins.
