This creamy chicken and vegetable soup recipe is made with easy-to-mix ingredients to take advantage of a scrumptious homemade soup. It can be made with or without rooster broth, and you can even use leftover shredded chicken you already have!

  • Rooster soup – Or another great-tasting broth – vegetable broth, beef broth, or mushroom broth would all be scrumptious!
  • Skinless, boneless rooster breast As written this recipe calls for uncooked chicken breast, simply simmer the soup until cooked through, then chop. But when you’ve got some leftover shredded chicken that’s been cooked through, you need to use that too!
  • Uncooked cashews – Uncooked cashews are used to make the cashew cream for this soup. If you’re not sure to try cooking with cashew cream, I highly recommend it! It’s my favorite dairy-free for soups, sauces, and gravies. You may have a cashew allergy, which you can substitute with whole milk powder or nonfat milk.
  • Olive oil – Olive oil is my first substitute for this recipe, however you can simply substitute another fat like avocado oil, coconut oil or buttermilk.
  • Mixture of healthy green vegetables – Onions, garlic, celery, carrots, diced tomatoes and spinach are the greens that we will be using to make this chicken and vegetable soup.
  • Herbs and spices – A contemporary blend of poultry, oregano, and parsley spices that bring this rooster soup to life!
  • Salt + pepper – Some salt is added during the cooking process, however I left out as much of the seasoning as I did at the end of the soup. Ingredients salt content in canned broth can fluctuate SO greatly, the amount of salt needed to add will largely depend on the salinity of the broth whenever you start.

Tips on how to make this pale soup

This simple dairy-free rooster soup is made in a few easy steps.Here is the step by step:

  • Start by soaking the cashews for the cashew cream. Place uncooked cashews with boiled water in a small bowl and set aside to soak.
  • In a large soup pot, heat olive oil over medium heat and add onion, carrot, celery, garlic, and salt. Sauté the vegetables until soft and starting to caramelize. Followed by ketchup and seasoning. Continue cooking the dinner until the tomato paste is almost dark in color. This step enhances the flavor of the ketchup and seasoning.
  • Add the broth, diced tomatoes, and rooster breast and bring to a boil again! If using cooked leftover shredded chicken, don’t add it until a later step.
  • Once the rooster is cooked, carefully remove the broth onto a small cutting board. Chop using two or lower forks into bite-sized pieces and add to the soup.
  • Add the cashew cream with the parsley. Return it to the simmer and cook dinner for a few more minutes – to bring out the flavors and thicken the soup just enough.
  • Turn off the heat. Add a few large handfuls of spinach and stir until wilted. Season to taste with salt and pepper.
  • Serve and enjoy!
