Now, working in batches, add the potatoes to the oil. Don’t let the pan (kadai) or pan get too tight. The oil will be much hotter and less bubbly whenever you fry your potatoes at this temperature. Start frying them. 13. Stir-fry for a while while frying them to cook evenly.14. Fry/blanch in oil for about 3 minutes or until potatoes are cooked through, however not brown from the outside. Press some more paper towels from above to absorb more oil. Let half of the fries cool to room temperature. Note: After removing this batch, you can continue to fry the second batch of potatoes. By the time you fry the second batch, the first batch should have softened enough for the second batch. So even though you have to fry twice, you’re using the same batch of oil all the time!
Second Fry
16. Now improve the flame to medium high or excessive. Again right here for heavy pans use a very high flame and for less heavy pans use medium high heat. The oil must be between 180 and 185 degrees Celsius (356 degrees Fahrenheit).17. Put the batch of pre-fried potatoes in the new oil. The oil will be hot and bubbly shortly and quickly when you add the potatoes.18. Usually sauté potatoes while frying them to prepare dinner for them to cook evenly. Fry the fries for 3 minutes or until crisp and golden. The sides must grow to be yellow. 20. Use a slotted spoon to remove finger crumbs. Place the fries on the paper towels again to absorb the oil.
