Cauliflower Katsu Curry

Cauliflower katsu, you bought my consideration. In my small kitchen, it took me over two hours to make this three part recipe! Households were so hungover that when it landed on the dining table, they ate it up with several oohs and aahs in less than 10 minutes. Cooking time doesn’t mean it’s a hassle, deep-frying takes more time than it doesn’t, and in a small house I need to combine curry and katsu sauce afterwards. Rooster Nori (above photo)

I absolutely do not want to fry the rooster any sooner, however this recipe is very approachable. Although it says to dredge and wrap your rooster with nori strips while the oil is heating up, it’s a lot safer to have everything prepped earlier than when you pop the lid because when you In the beginning, everything happens in a short time. Remember to soak some salt water on the surface to help the nori stick when wrapping. I made about 30 dishes to share with my household of 5 and there were no leftovers. I ate 10 dishes by myself while eating the same junmai sake that I used soaked in brine. The rooster here is perfectly crispy, just a bit candied, with quite pronounced scallions and shoyu flavors. My household has asked me to do this again. —Katrina Valcourt, managing editor

Garden Poke

When I put this together, I thought, “There’s no way this is going to taste like poop.” But it works — and this simple recipe has worked for both my vegetarian and non-vegetarian friends! The smell of sweet and sour roasted radish

This dish features a combination of roasted beets with earth, beets and even a quick pickle of the stem. Sardine Pūpū

I suppose this could be easy but it definitely takes two days. In my case, the wait was almost as if the recipe had a step that said “allow the tide to burn the rock.” If it is necessary to mix olive oil with lemon and chili pepper, take note: It takes a day for the flavors to blend. Those who slice onions with a semicircle like to sit in an ice bath until the ice melts. And the sardines should be lightly sautéed with garlic, chili peppers, soybeans, and apple cider vinegar, keeping them intact. The whole thing is a lesson in perseverance and restraint. Blistering Shishitos with Furikake Ranch and Crispy Quinoa

Since I serve this as a dinner appetizer, I’ve halved the recipe, which requires 1 pound of shishitos to serve two to four. Half a pound serving 5 is simply great. While crunching the quinoa (which I simply did that afternoon), I used to expect it to take 10 minutes or so, but it definitely got under 5. And I actively smoked it in the kitchen. by cooking the peppers in the Macadamia Oil set to over medium – next time, I’ll use canola oil.
