All tips for cooking Chicken Mignons that are delicious, rich, succulent and easy to make!Chicken Mignons It’s one of our family’s favorite meals, all year round, because it’s delicious moist chicken thighs, wrapped in bacon, with delicious garlic butter. This recipe because of the crispy bacon on top and the chicken is moist, succulent and so delicious! I’m sure most people know this recipe but I wrote this recipe down, (a request from my boys) so that when I was a teenager the boys would have left our house and been on their own. If they survive in the ‘big’ world, they can cook one of their favorite meals at home. (Or when I visit, the food is edible… ????) There are some Tips to make Chicken Mignons To make it easier, I’ve added tips below each of the following photos.

Tip 1

Place one of the chicken thigh fillets between two sheets of baking paper and, using a kitchen mallet, pound the chicken until thinner. Make sure you only use the smooth side of the mallet or you’ll mess up the paper and chicken.

You can add a little mustard to add more flavor to the dish. I make garlic butter by simply mixing the crushed garlic into soft butter, wrapping it in cling film (plastic) into a long roll and then putting it back in the fridge to set. After that, some garlic butter can be easily cut. You can also add herbs to the garlic butter… the perfect way to make this crispy garlic butter bread.

Tip 3

Roll up the chicken thighs and place over the long piece of bacon and secure with two toothpicks, making sure you leave enough toothpicks out so everyone can see and can remove them before eating. You don’t want to give them a latent surprise about the ‘wood’ in their chicken, when they’re eating it.

Tip 4

In the oven tray, spread some baking paper (makes it a lot easier to clean later) and place in the chicken tray. Place a knob of butter on top of each one. I put it on the toothpick to keep it at the top. BEST Tip then fill the dish with chicken stock, up to half a portion of chicken. This way when cooking chicken is cooked in chicken stock, which makes the chicken very moist and succulent.

Tip 5

Bake in a preheated medium-high oven (180ºC or 350F), until the bacon on top is crispy and golden brown, then the chicken is done. This will depend on the thickness of your chicken mignon and how much mignon is in the roast.Chicken Mignons very nice when you have friends or family for dinner because you can prepare them in advance, cook them when guests are there, they look amazing and taste great!!
